I often cook and take into visits Iranian food and regularly get asked by visitors to Baxter where I get my Iranian food recipes. Cooks should note that much 'Middle Eastern" food is Arabic in origin, although nearly all food from the region has a variation specific to a region or country.
Persian or Iranian food is somewhat different, I had curious questions about my Baba Ghanoush and Hummus when I took them in to my Iranian friends....Middle Eastern food is not ubiquitous throughout the region!!

Some great cook books to refer to are:
"The Legendary Cuisine of Persia" by Margaret Shaida published by Grub Street. (Iranian/Persian classic recipes - I recommend this book to any budding Persian cook).
"The Complete Middle East Cookbook" by Tess Mallos published by Lansdowne. This book has sections for each "Middle Eastern" Country and all the classic and favourite dishes are in it.
"A New Book of Middle Eastern Food" by Claudia Roden Published by Penguin. The region from which the recipe comes is not specified, but this is a fantastic collection of recipes.
"Arabesque, Modern Middle Eastern Food" by Greg and Lucy Malouf (modern versions of dishes from Arab, Lebanese/Syrian regions).
Of course there are many other books, a friend of mine has a great "Vegetarian Middle Eastern Food" book, so keep your eyes pealed!
